Preparation

  • 50 grams of EGG YOLK
  • 70 grams of EGG WHITE
  • 200 grams of cream
  • 2 tablespoons of HONEY
  • 1/4 teaspoon of SALT
  • 90 grams of BROWN SUGAR
  • 15 grams of WHEAT FLOUR

  • 80 grams of WHEAT FLOUR
  • 50 grams UNSALT BUTTER, cut into 1.3 cm pieces

PREPARATION METHOD: DOUGH

PREPARATION METHOD: COVERAGE

  1. Place the sugar, flour and butter in a bowl.
  2. With your fingertips and as fast as you can, work the butter into the dry ingredients until the mixture resembles coarse sand.
  3. Arrange over the peaches.
  4. Bake for 45 minutes, or until filling is bubbly. (Place a baking sheet under the pie pan to keep the oven from getting dirty in case the filling leaks out.)
  5. Let the pie cool overnight before serving.
