Ingredients

  • 2 and 1/2 cups (tea) of wheat flour
  • 4 tablespoons of sugar
  • 3 tablespoons of vegetable fat
  • 1 egg
  • 1 teaspoon cinnamon powder
  • 3 tablespoons marsala wine (approximately)
  • Wheat flour for flouring
  • Oil for greasing and frying
  • 1 egg white for brushing
  • Lemon zest, pistachio, candied fruit or sprinkles for garnish
  • Icing sugar for sprinkling

Filling

  • 2 cups of ricotta (mashed)
  • 1 can of condensed milk
  • 2 tablespoons icing sugar

Preparation mode

  • In a bowl, mix the flour, sugar, fat and egg.
  • Add the cinnamon and wine, little by little, mixing with your hands until you form a smooth and soft dough.
  • If necessary, add more wine.
  • Roll out the dough on a floured surface until thin.
  • Cut the dough into 10cm circles.
  • Roll each dough circle into greased aluminum cylinders, sealing with the egg white.
  • Slowly fry in hot oil until lightly browned.
  • Carefully remove the dough from the cylinders and set aside.
  • For the filling, place all the ingredients in the food processor and process for 2 minutes.
  • Turn off and fill the straws.
  • Place on a platter, decorate as you wish (lemon zest, pistachio, candied fruit, sprinkles…) and sprinkle with icing sugar.
  • Serve immediately.

Preparation time: 70 minutes

Yield: 20 servings
